Holiday Cookie Collab with Kelsey Elizabeth Cakes!

Our love for Kelsey’s beautiful desserts began when we were tagged in a post of her sweet little girl wearing Pink Chicken. As soon as we clicked on her profile, we fell in love with everything she did - seriously some of the prettiest (and most delicious!) desserts we've ever seen. Last holiday season, Kelsey shared a dreamy tray of Christmas cookies that instantly sparked our imaginations - we had to turn them into a print! Pink Chicken: What were your thoughts on seeing your cookies as holiday PJs?
Kelsey: Oh my gosh, I was so excited. Matching PJs are a huge thing in my family. We have done matching PJs since forever, when Nick joined our family I was like, “Nick, get ready, ‘cause we're all matching on Christmas!” So these are definitely gonna be our matching jammies. I am so, so excited. They're so stinkin’ cute. I just love them!
Pink Chicken: What are your top two favorite holiday cookies?
Kelsey: My top one has got to be our soft and chewy ginger snap. So good. It's not your typical crunchy one, it's really soft and chewy. It's like a ginger molasses! And then second, our classic peanut butter. I'm such a chocolate peanut butter fan. It's easy, it's classic. It's a classic for a reason!
Pink Chicken: What are your tips when baking with kids, and how to make it fun and stress-free?
Kelsey: I would say number one, pick a cookie that they can help with. So make sure you're not picking some really extravagant cookie, pick a cookie that they can actually understand what they're doing. Two, give them a big part of it. Don't just let them pour the flour in - make sure it's something, whether it's putting sprinkles on or doing frosting or cutting out with cutters, rolling dough into balls, rolling them in sugar - give them a real job, don't just put them off to the side and kind of let them watch you. And then lastly, I would say, know that you are making these cookies to make a memory with your kids, and not necessarily to show up to a Christmas party with the most beautiful Christmas cookies!
